Easy Cowboy Casserole with Tater Tots

Ingredients

  • 2 lb ground beef 80/20 for best flavor
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning about 1 ounce
  • 1 can black beans 15 ounces, drained and rinsed
  • 1 can corn 15 ounces, drained
  • 1 can cream of mushroom soup 10.5 ounces
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 1 bag frozen tater tots 32 ounces
  • to taste salt
  • to taste black pepper
  • 2 tablespoon fresh parsley chopped, optional garnish

Instructions

  • Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
  • In a large skillet, cook the ground beef with the onion and garlic over medium-high heat until browned. Drain excess grease.
  • Stir in the taco seasoning with about ¼ cup water and simmer for 2 minutes.
  • Lower the heat and mix in the black beans, corn, cream of mushroom soup, sour cream, and 1 cup of cheddar cheese until creamy.
  • Spread the beef mixture evenly into the prepared baking dish and sprinkle the remaining cheddar cheese on top.
  • Arrange the frozen tater tots in a single layer over the cheese.
  • Bake uncovered for 45–50 minutes until the tater tots are golden and the casserole is bubbly. Rest a few minutes before serving.

Notes

This cowboy casserole is freezer-friendly and can be assembled ahead of time and frozen for up to 3 months.
For a lighter version, swap ground beef with ground turkey.
If your family loves heat, add diced jalapenos or use pepper jack cheese.
Leftovers reheat best in the oven to keep the tater tots crispy.
