Ingredients

Yogurt Base

  • 2 cups plain Greek yogurt Full-fat is creamiest but any works
  • 3 tablespoons honey Or pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Blueberry Swirl

  • 1 cup blueberries Fresh or frozen
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch Optional, mixed with 1 tablespoon water for thicker swirl

Instructions

  • In a small saucepan, combine the blueberries, honey, and lemon juice over medium heat. Stir gently for 5 to 7 minutes until the berries break down into a jammy sauce.
  • If desired, stir in the cornstarch slurry and cook for 1 to 2 more minutes until glossy. Remove from heat and let cool completely.
  • In a mixing bowl, stir together the Greek yogurt, honey, vanilla extract, and salt until smooth and creamy.
  • Spoon the yogurt mixture into silicone molds or a lined mini muffin tin, filling each about three quarters full.
  • Add small dollops of the cooled blueberry sauce on top of each yogurt bite.
  • Using a toothpick or knife, gently swirl the blueberry sauce into the yogurt without overmixing.
  • Freeze for 3 to 4 hours, or until completely solid.
  • Remove from molds and store in a freezer-safe container. Let sit at room temperature for 2 minutes before eating.

Notes

• Use full-fat Greek yogurt for the creamiest frozen texture
• For dairy-free bites, use coconut yogurt and maple syrup
• Store in the freezer for up to 3 months
• Do not let them thaw completely or they become too soft
• Add mini chocolate chips or granola on top for extra fun
