Preheat your oven to 375°F (190°C). I always let my little Olivia help press the oven buttons, she takes her job very seriously. Grease your baking dish while it warms.
In a big bowl, gently toss the sliced [apples], [sugar], [flour], [cinnamon], [nutmeg], [lemon juice], and [vanilla]. Olivia loves stirring while sneaking apple slices, just part of the process around here.
Spread the apples evenly into your prepared baking dish. I let Olivia smooth the top with a spoon, it may not be perfect, but that’s part of the magic.
In another bowl, mix [oats], [flour], [brown sugar], [cinnamon], and [salt]. Pour in the [butter] and stir until crumbly. Olivia calls this “making dessert sand.”
Sprinkle the crumble over the apples. Don’t press it down, loose and crumbly is exactly what we want.
Bake uncovered for 40–45 minutes, until golden brown and bubbling around the edges. The house will smell like cinnamon heaven.
Let cool for 10 minutes before serving. We always top ours with vanilla ice cream and enjoy it curled up on the couch together.
